How to Make Hamburgers

I know this is crazy, but I didn't eat my first hamburger until age 30 and three-quarters. It was a traumatic experience ( http://www.lifeisapalindrome.com/content/schoolbuses-neuroplasticity-an… ). But now I really like them...most of the time.

In order for my GAPS recipe section to accurately reflect all the new foods I am now making, here is my recipe:

1 lb. super-good-quality (local, pastured, organic, etc.) ground beef
1/4 tsp. or so good salt
1/4 tsp. or so freshly ground pepper
2 tbsp. finely minced onion

Gently mix all ingredients, and form into four patties. The thickness should be slightly less in the center (1/2" or so) vs. the edges (3/4" or so).

Heat a large, cast-iron frying pan thoroughly over medium heat. Fry patties for about 4 minutes on the first side, or until a nice crust forms. Flip and rotate and cook for another 3-5 minutes, until the center is barely pink. Don't pat the patties down.
